Being in Vancouver for the past week has definitely had its advantages. Fresh produce from the Okanogan Valley has been spectacular. The delicious taste of the fresh fruits, vegetables and herbs has been exquisite. What a sympathy for the senses. Nothing tastes like “fresh” does.
I went to the market and decided to create a delicious quick luncheon salad from the bounty of the Okanogan Valley. And then I thought I would share this with you as another one of my wonderful Healthy Living Inspirations. Enjoy.

Summer Spectacular Salad
3-6 big fresh basil leaves -chiffonade (cut into long, thin strips. This is generally accomplished by stacking leaves, rolling them tightly, then cutting across the rolled leaves with a sharp knife, producing fine ribbons)
1/4 cup cottage cheese
1 ripe tomato chopped
6 inch piece of cucumber diced
Squeeze of fresh lemon
Drizzle of olive oil
1/4 teaspoon of dill (optional)
Dash of fresh ground pepper and sea salt
Put all ingredients into a bowel. Stir and enjoy!
This was soooo good. Fresh. Fabulous. Delicious.
