Yummy Healthy Coconut Curry

In the lifting of the veil, all is seen… the truth…the way Lift the veil, she said, take this chance, you will never be the same… Only goodness awaits as the light beams onto your face… it is good it is right it is the Light you have been waiting for it is here now…all is well Trust Believe Know You Are Home and with that, she dropped the veil and stepped into the Light.

I am Blessed

I am reminded of how blessed I am as I looked out the french doors at this amazing picture this morning. I am smack dab in the middle of town, yet I have the peace, tranquility of a babbling brook complete with the beautiful songs of the birds that awaken me early every morning. Judy’s White Bean and Kale Easy Peasy Soup

Judy’s White Bean and Kale Easy Peasy Soup 2 TB Olive Oil 1 medium to large onion, chopped 1 bunch kale, washed and roughly chopped 1 15-oz can  cannelini/white kidney beans 6 cups veggie broth* (I use bouillon cubes -no msg in them) 1/4 cup tamari/soy sauce 1/2 tsp black pepper 1 cup rice or whole wheat spiral or other pretty pasta** **Gluten-free option: use rice noodles instead of wheat. Yummy Comfort Food

Sweet Potato Gnocchi with Cream Sauce Ingredients: 2 (8 ounce) sweet potatoes 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1 egg 2 cups all-purpose flour Directions: Pierce the sweet potato with a fork. Bake the sweet potatoes until tender and fully cooked, between 40 to 55 minutes depending on size. Cool slightly. Cut in half and scoop the flesh into a large bowl. Summer Spectacular Salad

Being in Vancouver  for the past week has definitely had its advantages. Fresh produce from the Okanogan Valley has been spectacular. The delicious taste of the fresh fruits, vegetables and herbs has been exquisite. What a sympathy for the senses. Nothing tastes like “fresh” does. I went to the market and decided to  create a delicious quick luncheon salad from the bounty of the Okanogan Valley.
